Recipe Breakdown
Servings: 8
Ingredients:
- 2 Tbsp coconut or avocado oil
- 2 garlic cloves, minced (or pre-minced from a jar)
- 1 cup onion, chopped
- 2 lbs. grass-fed ground beef (or ground turkey)
- 1/2 tsp dried oregano
- 1 tsp Pink Himalayan salt
- 1/2 tsp ground black pepper
- 16 oz jar marinara sauce (sugar-free or very low sugar; check your local health food section)
- 2 cups riced cauliflower
- 5 cups organic beef broth
- 8 cups cabbage, sliced into 1/2” strips and chopped into 2” pieces
Directions:
1. Sauté the Aromatics:
In a skillet, heat the coconut or avocado oil over medium-high heat. Once hot, add the chopped onion and sauté until soft. In the last minute of cooking, add the minced garlic and continue to sauté until fragrant.
2. Brown the Meat:
Add the ground beef (or turkey) to the skillet, breaking it apart as it cooks. Continue cooking until the meat is browned and no longer pink.
3. Combine in the Crock Pot:
Transfer the browned meat mixture to the crock pot. Add the dried oregano, Pink Himalayan salt, black pepper, marinara sauce, riced cauliflower, beef broth, and chopped cabbage. Stir everything together until well combined.
4. Slow Cook:
Cover and cook on high for 3 hours or low for 6 hours, allowing all the flavors to meld beautifully.
Stove Top Option
If you prefer cooking on the stove, simply use a Dutch oven or large soup pot. Sauté the garlic and onions in the oil, then add the ground beef, cooking until browned. Next, incorporate all the remaining ingredients and bring the mixture to a simmer. Cover and cook on low heat for about an hour, or until the cabbage is very tender.
Once your soup is ready, serve it hot and enjoy this delightful and nourishing meal. The combination of flavors and textures in this Crock Pot Cabbage Roll Soup will warm you up and leave you feeling satisfied! Whether you’re feeding a crowd or preparing a comforting dinner for yourself, this recipe is sure to become a favorite in your kitchen. Enjoy!
