Ingredients:

  • 3½ – 4 lbs. organic chicken bones (neck, back, legs) for homemade broth OR 6-8 cups organic chicken broth
  • 4 links Italian chicken sausage (casing removed and cut into medium-sized chunks)
  • 1 medium head of cauliflower, cut into small florets
  • 1 bunch of kale, stems removed and torn into bite-size pieces
  • 1 medium onion, chopped
  • 2-3 Tbsp unrefined organic coconut or avocado oil
  • 1/2 tsp crushed red pepper (or more to taste)
  • Sea salt and pepper to taste
  • Heavy cream (optional)

Directions:

1. Make the Broth (if using homemade):
To prepare your own chicken broth, place the chicken bones in an 8-quart Dutch oven. Fill the pot with water to about an inch from the top. Bring the water to a boil, then reduce the heat and let it simmer for 1½ to 2 hours. Occasionally skim off any foam that rises to the surface. For extra flavor, consider adding a couple of stalks of celery, two carrots, an onion, 5 sprigs of fresh parsley, 3 sprigs of fresh thyme, and a bay leaf during simmering.

2. Strain and Sauté:
Once the broth is ready, strain it into a large bowl and set it aside. In the same pot, heat the coconut or avocado oil over medium heat. Add the chicken sausage and chopped onion, sautéing until the sausage is browned and the onions are translucent.

3. Add Cauliflower:
Next, add the cauliflower florets and continue sautéing for about 4-5 minutes, stirring frequently.

4. Add Broth and Season:
Pour in the prepared broth (or store-bought broth), season with 1 teaspoon of sea salt (adjust to taste), black pepper, and the crushed red pepper. Bring to a simmer and let it cook for 10-15 minutes.

5. Add Kale:
Stir in the torn kale and simmer until it becomes tender, about 5 minutes.

6. Optional Creaminess:
If you prefer a creamier soup, slowly stir in up to 1/4 cup of heavy cream, adding it a couple of tablespoons at a time until it reaches your desired consistency. However, the flavor of the chicken broth is wonderful on its own!

7. Serve and Enjoy:
Ladle the soup into bowls and enjoy it warm. This nourishing soup is perfect served alongside a simple salad or some crusty bread for dipping.
