- 2 Tbsp. organic coconut or avocado oil (divided)
- 1/2 onion, diced
- 1 lb. organic chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 8 cups cabbage, shredded
- 1/2 red bell pepper, diced
- 1/4 cup Coconut Aminos or Tamari (gluten-free soy sauce)
- 3/4-1 tsp. ground ginger (to taste)
- Pink Himalayan salt and ground pepper, to taste
Directions:
1. Sauté the Onion:
In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add the diced onion and cook for about 3-5 minutes, or until it becomes translucent.
2. Brown the Chicken:
