Nutritious Almond Power Bars: A Healthy Snack Option

I often bring these bars to gatherings, and they are a hit! Not only are they a delicious treat, but they’re also a much healthier option for those late-night snack attacks. They’ve been a staple in my kitchen ever since we embraced the Maximized Living program.

Ingredients
For the Bars:
- 2 cups raw almonds
- 1/2 cup golden flaxseed meal
- 1/2 cup unsweetened shredded coconut
- 2 scoops protein powder (vanilla or chocolate)
- 1/2 cup almond butter (unsweetened, no sugar added)
- 1/2 tsp Pink Himalayan salt
- 1/2 cup coconut oil, melted
- 8 drops liquid stevia or 3/4 tsp pure stevia powder
- 1 tbsp pure vanilla extract
For the Chocolate Ganache Topping:
- 4 oz. unsweetened chocolate
- 1/3 cup heavy whipping cream
- 1/4-1/3 cup Swerve granular or xylitol (to taste)*
Directions
- Prepare the Almonds: Place the raw almonds into a food processor and pulse several times until you achieve a coarse grind.
- Combine Dry Ingredients: Add the golden flaxseed meal, shredded coconut, protein powder, almond butter, and salt to the food processor. Pulse for about 10-15 seconds to combine.
- Add Wet Ingredients: In a small bowl, mix the stevia and vanilla extract into the melted coconut oil. Then, pour this mixture into the food processor with the other ingredients. Pulse until everything comes together and forms a paste. The longer you process it, the finer the almond grind will become, so choose your texture based on your preference!
- Prepare the Baking Dish: Line an 8×8-inch baking dish with parchment paper or cling wrap. This makes it easier to lift the bars out later. Press the almond mixture firmly into the dish, spreading it out evenly.
- Chill to Set: Refrigerate the mixture for about 1 hour, or until it firms up.
Making the Chocolate Ganache Topping
- Melt the Chocolate: In a double boiler, melt the 4 ounces of unsweetened chocolate.
- Heat the Cream: In a small pot, scald 1/3 cup of heavy whipping cream and stir in 1/4-1/3 cup Swerve or xylitol until dissolved to taste.
- Combine: Pour half of the cream mixture into the melted chocolate and stir quickly. If the chocolate seizes up, keep adding more cream and stirring until it becomes smooth again. You may need to adjust the amount of cream to achieve a smooth, spreadable ganache consistency.
- Finish the Bars: Once the ganache is ready, pour it over the chilled almond mixture in the baking dish, spreading it out evenly.
- Chill Again: Return the bars to the fridge until the ganache sets.
- Storage: Once firm, cut the bars into squares and store them in the refrigerator. Enjoy!
Additional Notes
- These bars can be dairy-free by substituting the heavy cream with coconut cream for the ganache.
- Keep in mind that xylitol is poisonous to dogs, so store any finished product safely away from pets.
