ALMOND POWER BARS

(By Maximized Living Nutrition Plan)

I bring this these bars to many functions and always get asked for the recipe. They are a great snack anytime of day, but feel like a dessert when I have one of those late night cravings.

Ingredients

2 cups raw almonds

1/2 cup golden flaxseed meal

1/2 cup unsweetened shredded coconut

2 scoops protein powder (vanilla or chocolate)

1/2 cup raw almond butter

1/2 tsp sea salt

1/2 cup coconut oil

8 drops liquid stevia or 3/4 tsp stevia powder

1 Tbs. pure vanilla

Directions

Place almonds, flax meal, coconut, protein powder, almond butter and salt in a fo(od processor.  Pulse about 10-15 seconds.  Melt coconut oil and stir the stevia and vanilla into oil.  Add mixture to the food processor and pulse until it forms a coarse paste.  (The longer you process it, the finer the grind of the nuts.) 

Line an 8x8 baking dish with parchment or cling wrap and press the mixture into the dish.  (This helps to remove it from the pan later.)  Refrigerate for an hour or until mixture hardens.

CHOCOLATE TOPPING

Melt 8 squares unsweetened chocolate in double boiler and sweeten with stevia to taste.  Can add cinnamon to taste, as well.

Cindy’s Tanzar’s Ganache  (Ooooh! Pick me, pick me!)

Melt 4 squares unsweetened chocolate in double boiler. In small pan scald 1/2 cup heavy cream, adding 1/4-1/3 cup xylitol or erythritol to taste.  Stir until dissolved.  Poor half of the cream mixture into the melted chocolate and stir quickly.  If the chocolate seizes, continue to add more cream and stir until it becomes smooth again.  Use only the amount you need to make the consistency of a ganache.  It seems to be a bit different each time I do it, so I always err on making more cream mixture than I need.  

Dairy Free - substitute the heavy cream for coconut cream

Pour ganache over almond mixture and refrigerate until set. Store in refrigerator. Enjoy!
